For those who don't like marzipan but would like a special cake for their Easter tea-table, this cake uses the same fruit cake recipe as my traditional Simnel Cake but omits the marzipan layer in the middle & on top of the cake. Instead, the cake is topped with a thin layer of yellow sugarpaste icing and 3 chocolate mini-eggs
